Oatmeal Chocolate Chip Cookies

Rev. 01-Oct-2001

Preheat the oven to 400 degrees F. Lightly grease two large baking sheets with butter or vegetable shortening.

In a large mixing bowl, cream together the butter and sugar. Beat in the egg and mix well. Stir in the molasses. Sift the flour with the baking soda, salt, and cinnamon. Add half the flour to the butter mixture and stir until thoroughly blended. Mix in the oatmeal, then gently stir in the remaining flour. Add the chopped walnuts and mix well.

Drop rounded teaspoonfuls of batter onto the baking sheets, about 2 inches apart. Bake for 10 to 12 minutes [10 minutes in our oven], or until the cookies have browned around the edges. Remove from the oven.

After the cookies have cooled for 2 to 3 minutes, but are still warm to the touch, use a spatula to transfer them to wire racks to cool completely.

Makes about 48 cookies [but only 44 for me].
