Recipe: Merry Christmas Cookies 1/3 cup sugar 1/3 cup shorteneing 1 egg 2/3 cup honey 1 teaspoon lemon extract 2 3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt Pre-heat oven to 375 F. Mix sgar, shortening, egg, honey and lemon extract. Stir in remaining ingredients. Roll dough 1/4 inch thick. Use cookie cutters to cut into desired shapes. Place 1 inch apart on lightly greased cookie sheet. Bake approximately 7 to 8 minutes or until no indentation remains when cookies are touched. Cool cookies and decorate if desired. I recognize the recipe. In fact I make it every Christmas. The name I have is "Merry Christmas Cookies" My mother made the first batch years ago. She found the recipe in a Betty Crocker Cookbook printed about 1956. I have seen it several more times in various Betty Crocker cookbooks printed since then, under the same name. I like the cookies because they keep well, and are equally tasty with or without decorative frosting. Because of high altitude, I put in a bit more flour to keep them from spreading out too thin.
