Lee's Gluten Free Peanut Butter Cookies - 325 F

"It's incredibly easy and works with a lot of nut butters! It can be multiplied for any amount. I've made up to 6x before. :-)"

"Note: I also make a thumbprint version of this called Peanut Butter and Jelly. Just use the tip of a wooden spoon to make a small well in the center and fill with 1/2tsp of any jam you like!)"

Ingredients (18 cookies at 1 ounce each)
1 CUP Peanut Butter
1 CUP Sugar
1 Egg
1 tsp Vanilla Extract (Optional)


  1. Preheat oven to 325 degree.
  2. Mix together.
  3. Scoop out dough, placing two inches apart. (I like to use a one ounce scoop)
  4. Cross hatch cookies with a fork pressing them into a disk.
  5. Bake for 10 minutes until lightly browned.
  6. Cool on a wire rack.
