RECIPE: Chocolate Pate' (Joann Pierce) Keywords: chocolate dessert rich SOURCE: Joann Pierce Servings: 8 - 10 1 lb bittersweet or semisweet chocolate, finely chopped 1 1/2 c whipping cream 1 stick unsalted butter 2 Tbl Kahlua or coffee liqueur 2 tsp vanilla extract 1 1/2 c toasted whole hazelnuts raspberry sauce Place the chocolate in a mixing bowl. Combine the cream and butter in a small saucepan and heat to the scalding point. Pour the mixture over the chocolate. Stir slowly until the chocolate is melted. Blend in the Kahlua and vanilla. Cool at room temp for 30 minutes. Stir in the hazelnuts and blend well. Pour into a 3 by 3 by 9 inch loaf pan that has been lined with plastic wrap, leaving a 2 inch overlap around all edges. Cover and chill overnight in the the refrigerator or freezer. Remove the chocolate from the pan by pulling up on the edges of the plastic wrap, lifting the pate' up and out of the pan. Place the pate' on a cutting board and remove the wrap. Cut the pate' into 1/2 inch thick slices. Serve each slice with raspberry sauce or a dollop of whipped cream.
