RECIPE: Oatmeal (Chocolate Chip) Cooky Bars Bake at 375 F. 2 cups flour 2 cups quick-cooking oats 1 cup brown sugar 1/2 cup sugar 1 tsp salt 1 tsp baking soda 1 tsp vanilla 2 eggs 1/2 cup margarine, melted (1 stick) 1/2 cup vegetable oil 1 cup chocolate chips 1 cup butterscotch chips Mix all ingredients by hand in large mixing bowl. Spread in 13"x9"x2" pan (I used a rubber spatula) and bake at 375 degrees for 20 minutes. I've made it with all chocolate chips, and with the half chocolate chips /half butterscotch chips; with and without nuts; and so forth. The most interesting variation I have to report involves using Crisco. This wasn't one of those Crisco butterflavor sticks. It was plain old ordinary Crisco vegetable shortening. Since our microwave failed, I have to do the "melt butter" step in a saucepan. This time I decided I'd use Crisco. I measured the canola oil into a measure up to the 1/2 cup line, then added Crisco until it came up to the 1 cup line. I poured it in the pan, heated it up until it all melted... I let it cool a little bit, and then poured it into the dry ingredients, which included the chocolate chips. It melted the chocolate. Instead of chocolate chip bar cookies, I had chocolate brownies. In my jelly roll pan, they're not as thick. Baking one pan for 20 minutes seemed to be slightly too long. Baking two batches at the same time definitely need more than 15 minutes.] [Dec. 2020.
