They are great the first day, but my Mom taught me a trick that keeps them just as good. On the plate or in the tin that you put the cooled cookies in, place one piece of plain bread in the bottom (the heel is fine). Pile your cookies on top and seal tightly with the top or with saran. The cookies somehow pull the moisture from the bread, keeping them wonderfully moist and chewey. I always do mine this way! Amy McCorkle mccorkle@hmco.com
