Recipes for Bisquick substitutes, including recipes using it. RECIPE: Bisquick-like product (Birnes) Here is a recipe for a Bisquick-like product from "Cheaper & Better" by Nancy Birnes: 10 cups flour 1/3 cup baking powder 1 tablespoon salt 2 cups shortening Sift dry ingredients together, cut in shortening with a pastry cutter until the mixture resembles coarse oatmeal. Store in a tightly closed container. It will keep up to 6 months in dry weather. Refrigerate in very hot or humid weather. There should be no large lumps. I think a food processor would do a very good job of this. I have never made this but found the recipe somewhere. I think if you make this with shortening it could be stored in a cool place. If you can not find shortening, margarine would probably work but I think I would then store it in the refrigerator or make a smaller batch. It might also make some difference in the flavor of the end product. My wife and I have been using it for quite a while with good results. ----------------------------------------------------------------- Basic Quick Mix Combine and mix thoroughly: 6 1/2 cups of whole wheat or whole wheat pastry flour 1 1/2 cups of soy flour 1 tbsp. salt (or to taste) 1 cup of instant dry milk 1/3 cup baking powder 2 1/2 cups of wheat germ Store in a tightly covered jar in the refrigerator ready to make any of the following options or your own experiments. ------------------------------------------------------------------ PANCAKES Combine: 1 egg, beaten * 1 cup milk, buttermilk or yogurt 3 tbsp. oil Add to 1 1/2 cups Quick Mix * To make lighter pancakes, use 2 eggs and fold in stiffly beaten egg whites just before bakin. Add (optional): * chopped dried fruit (dates, apricots, raisins, etc.) * chopped nuts or fresh berries or canned, drained and chopped fruit. * My wife also uses grated apple with 1 tsp of cinnamon and chopped nuts. * Also 2 mashed bananas and chopped nuts. * Grated carrots, 1 tsp. cinnamon, and chopped nuts. It's unlimited on what you can do.
