Paper doilies, in three sizes. We put these down on the platters before we fill them, it makes them look nicer and makes cleanup go quickly.

Disposable gloves. Very handy if you don't trust how clean your hands can be (e.g., heavy smokers). Also plastic food wrap. We need a large supply of this, so we can wrap the platters after we fill them.
