RECIPE: Rotelle Alfredo ("Triple Twirl Alfredo") about 20-25 minutes 1 pkg (12 oz) "Rainbow Twirls" (rotelle pasta) 1/4 cup butter or margarine 3/4 cup grated Parmesan cheese 1/2 cup heavy or whipping cream 2 TABLESPOONS chopped fresh parsley Cook pasta according to package directions; drain. Meanwhile, in small saucepan, melt butter over medium heat; gradually stir in cheese then cream until well blended. Continue heating sauce, stirring constantly, just to boiling point. Remove from heat; stir in parsley and toss with hot cooked pasta. Serve. Makes 4 to 6 servings. [American Beauty "Rainbow Twirls" pasta package, mfd. by Hershey Pasta Group] [My wife only cooked half the pasta, and presumably cut down the sauce recipe as well; the first time she added the cream first, and it turned out just fine.] [In my experience, "Fettucine Alfredo" has been some flat noodles with a thick heavy cream sauce. This was nothing like that. The "Rainbow Twirls" are just Rotelle pasta (sort of like corkscrews, i.e. helix-shaped) in three different colors. And the sauce wasn't thick -- it was a nice cheesy sauce. In fact, as I put it, it's got Kraft Dinner beat all hollow. (And did you know that Kraft Macaroni & Cheese used to be marketed "Serve Kraft Dinner -- it saves on ration points" ?)] July 1991 Hazel Boston-Baden, P.O. Box 17522, Anaheim CA 92817. * * * * *
