I even got to know the owner as a graduate student, but he wouldn't give me the recipe. Finally they opened a restaurant in Tulsa, and after lunch there one day I noticed their big outdoor storage locker was open. I went in, and the only thing on the shelves were cans and cans of tomato puree. Nothing else. So I went home and tried tomato puree straight out of the can, and that was it! The sauce I'd been working to copy all those years. I've also made a good, simple sauce by browning onions and garlic in olive oil, then adding canned or fresh tomatoes, basil, and oregano, and cooking it all down until it's thick.
