Drain fat and discard. Add chili powder, salt and garlic salt to meat mixture. Stir in undrained tomatoes and beans, raw rice, water and green pepper. Cover and simmer, stirring occasionally, for 20 minutes. Top with cheese and chips if desired. "This is a fast, easy and delicious dinner for those hungry mountain men of yours. The little critters love it, too!" --Dayune and Gerry Metz, Scottsdale AZ [from "How to feed a Starving Artist Cookbook," Mountain Press Publishing Co., Missoula MT 1983; pg 73] [Debbie and I tried it - it's good, filling, and leftovers are re-skilletable.] [Another note for the novice: if the tomato or bean can sizes in your market aren't exactly right - 14 oz, let's say, or 17, or something like that - don't sweat it, the quantities aren't that crucial. Just dump in a can that's about the right size.] June 1991 Hazel Boston-Baden, P.O. Box 17522, Anaheim CA 92817. * * * * *
