Linda, I'm note sure if this is what you are looking for, but I have my Mom's recipe for what I call "Mom's Coffee Cake Breakfast Pizza". I think it's very good and have made it several times and served it for treats at work. Be aware, though...it's definitely NOT something you'll find in a Weigh-Watchers cookbook. It's kind-of a long recipe that takes several hours to complete, but I think it's worth the work and the wait. Hope you, or others on the EAT-L list can make some use of it. Dave Dawson Wisconsin DDawson@QGraph.Com <==><==><==><==><==><==><==><==><==><==><==><==><==><==><==><==><==><==><==><==> Mom's Coffee Cake Breakfast Pizza Dough: 1/2 Cup melted butter (1 stick) 1/2 Cup warm milk 1/4 Cup warm water 2 envelopes dry yeast 1 egg yoke (save egg white for later in this recipe) 1 1/2 TBSP sugar 1/2 tsp salt 2 Cups flour Combine butter, milk, water, and yeast. Stir until well mixed. Then add remaining dough ingredients and mix thoroughly. Cover dough and chill in fridge for 4 hours. Then spread chilled dough on a large, well greased pizza pan. Once dough is spread over the pizza pan, top it with 1 can each of either: * Cherry and apple pie filling -or- <-- very good combination * Blueberry and peach pie filling -or- <-- also very tasty * use your imagination. Note: If you use fresh fruit (i.e. strawberries, kiwi, etc), you may want to make a thick syrup (like that found in pie filling)) with your fruit. I've never done this, so you're on your own if you try it. Then continue with the... Scatter Drop Frosting: 8 oz cream cheese (regular or low fat work just fine) 1 egg PLUS the other egg white from the dough 1/4 Cup sugar 1/2 tsp salt 1 tsp vanilla Mix all frosting ingredients thoroughly and evenly drop it on top of pizza Next, make... Crumb topping: 1/4 Cup flour 2 TBSP softened butter dash of salt Mix flour, butter, and salt with a fork until crumbly. Sprinkle it evenly on top of the pizza. Finally, let it rise 30-60 minutes. Put in preheated oven at 325-350 degree (Fahrenheit) for 30 to 60 minutes (or until done - the frosting should just begin to brown, but don't let it get too dark). Let it cool for a bit before serving, but it tastes best when it is still warm. It's not bad served at room temperature or cold, either. Enjoy!!!
