RECIPE: CHILI TURNOVERS - 400 F 3/4 cup Quaker Masa Harina 1/2 cup sifted All-Purpose Flour 2 tsp. Baking powder 2 TABLESPOONS shortening, liquid or melted 1/2 cup warm water filling: 1 1/4 cups (10.5 oz can) chili For Masa pastry, sift together Masa Harina, flour and baking powder. Add shortening and water and stir until blended. Knead dough with hands about 1/2 minute. Divide dough into six parts. Shape each to form a ball. Roll each ball between two sheets of waxed paper to form a circle, about 7" across. Remove top sheet of waxed paper. Place about 3 TABLESPOONS chili on half of circle; fold other half of dough over top. Peel back waxed paper. Press edges of masa pastry to seal; flute edges. Prick top with fork. Invert turnover on hand; peel off waxed paper and place on lightly-greased cookie sheet. Bake in preheated hot oven (400 F) about 20 minutes. We divided the recipe in half, which worked out pretty well. The only comments I have to add is that rolling the pastry between the wax paper sheets should be done with a rolling pin; I had used my hands to roll out the balls, and so for some reason I tried rolling them out by hand. It didn't work, I couldn't get them nearly flat enough. I only had 3"-5" circles, which couldn't hold 3 TABLESPOONS each. I wound up with two single-TBLS and one 2-TBLS turnovers. Debbie had one of the smaller ones, I ate the other two. Also, in case you didn't know this (I didn't), "fluting the edges" is done with a fork -- I would have said "crimp the edges."
