Slowly add the cream and blend on low speed for 30 seconds more. Transfer the mixture to your ice-cream machine, and freeze according to the manufacturer's instructions. Add the cocoa and cinnamon a little at a time while continuing to blend at low speed. Slowly add the cream and blend on low speed for an addition 30 seconds.
