Here is what [Joe D.] found out on the web... ******************************************* Vanilla-Coffee Liqueur Makes 5 cups 1 1/2 cups brown sugar, packed 1 cup granulated sugar 2 cups water 1/2 cup instant coffee powder 3 cups vodka 1/2 vanilla bean, split (or 2 teaspoons vanilla extract) Combine sugars and water. Boil for 5 minutes. Gradually stir in coffee. Cool. Add vodka and vanilla and mix thoroughly. Cover and let ripen for 1 month. Remove vanilla bean. *************************************************************** Kahlua 1 qt. water 3 c. sugar 4 Tbsp. instant coffee Bring to boil. Reduce heat and simmer 1 hour. let cool and 1 Tbsp. Vanilla and either a pint or fifth of Vodka. Drink and Enjoy!! **************************************************************** To make Kahlua: 4 cups water 4 cups sugar 2 oz good instant coffee 1 vanilla bean 1 Fifth Cheap Bourbon (that's a 750ml bottle) Simmer water, sugar, and coffee until the sugar dissolves. Put vanilla bean and bourbon in a gallon jug and add the coffee syrup you just prepared. But a furry bear friend (similar to Smith Bros. cough drops) already has used *one* of these and is absolutely *e-c-s-t-a-t-i-c*, particularly with the cost for 9 16-oz bottles (he re-used Grolsch beer bottles that reseal with a metal clamp & rubber gasket like some older canning jars). He figures about $23, or 1/10th the cost of Kahlua(tm) in a 200 ml. bottle in the liquor store where we both work (!) Boil for 6 minutes; divide into 2 parts. Chop vanilla beans into small pieces; add to 1 part sugar syrup with coffee. Add bourbon to second half; stir well. Combine coffee mixture with bourbon mixture; blend well. Age for 6 weeks. Yields 1 gallon. SOUTH SEAS KAHLUA 2 oz instant coffee 3 1/2 cups sugar 2 1/4 cups brandy 1 vanilla bean, cut in half Combine instant coffee, sugar and 2 cups boiling water; stir in brandy. Pour into 2 bottles; add vanilla bean to each bottle. Seal and let age for at least 30 days. Yields 2 fifths. COFFEE LIQUEUR 3 1/2 cups sugar 1 vanilla bean 2 oz instant coffee (decaf, if you prefer) 1 fifth bourbon Combine sugar, coffee, and 2 cups of boiling water. Stir until all is dissolved (continue heating, if necessary). Pour into 1/2 gal bottle; e.g., empty liquor bottle. Cut up vanilla bean and add to bottle. Pour in bourbon and swirl to mix. Age for two months, it continues to improve with time. P.S. I usually follow the third one and use vodka for alcohol. Once I used grain alcohol (in smaller quantity, of course). I used bourbon once; it seemed to give it a sweeter smoother taste. If you add liquor to hot water, some of the alcohol will evaporate. Wait until it cools. Try leaving some age for 2 years or longer. I recently enjoyed some that was over 8 years old...very, very nice.
